How Pure is your Pantry?

With respect to gluten-free living, there are so many incredible people with amazing life stories to share about health challenges, triumph and success. Elizabeth Kaplan is one of those people. Elizabeth is a mother of 3, author of the cookbook “Fresh from Elizabeth’s Kitchen: Gluten-Free & Allergy-Free Recipes”, founder and CEO of the Pure Pantry – a very successful organic and gluten-free manufacturing company, cooking instructor, and let’s not forget Martha Stewart gluten-free blogger extraordinaire! One of Elizabeth’s most interesting jobs is being one of Martha Stewart’s gluten-free experts.

What captured our attention about Elizabeth is her personal connection to living gluten-free – she and all 3 of her children live a gluten-free lifestyle.  Elizabeth decided to make a difference for those who, like herself, live gluten-free by creating healthy, delicious and easy to use gluten-free baking mixes.  Her cookbook has been extremely helpful to those who want great tasting food, but need to learn how to cook with alternative grains, sweeteners and allergen-free substitutes.

The Pure Pantry is dedicated to manufacturing healthygluten-free baking mixes that are made with all natural, healthy grains that are organic, certified kosher, and certified and vegan. The products are free of gluten (certified gluten-free), dairy, casein, nuts, eggs, and soy. They are high in fiber and omega 3’s, and do not contain any refined sugars or preservatives, and most importantly, they are delicious!

We were given the opportunity to try them all, and we were extremely impressed! Overall, the mixes make it quick and super easy to freshly bake a variety of scrumptious, healthy gluten-free treats (this mother of 3 sure gets it!). Each mix is just right in terms of sweetness, and nutritionally low in sugar per serving.

The all-purpose flour mix made wonderful banana bread muffins (and you can bake just about anything with it from what we’ve read). We enjoyed pancakes from both mixes. The organic buckwheat flax pancake and baking mix made tasty, moist pancakes, and reminded us that buckwheat is a healthy, versatile ingredient we need to use more often. The 3 cookie mixes made delicious cookies. A favorite is the oatmeal spice cookie mix (with added chocolate chips for the best of all worlds!) There is even a Pure Pantry award winning recipe on the side of the package for chunky chocolate oatmeal caramel bars! To save the best for last, the wholegrain dark chocolate cake mix is in a word: heavenly! Who wouldn’t love a piece of gluten-free chocolate cake that’s moist, light and
healthy – containing quinoa flour to boot!
