Chunky Monkey Cookies

I just love the combination of bananas, peanut butter and chocolate. It can’t get any easier than this! This is a great healthy treat for the holidays, or any time of year, cookies for any reason or season. Apparently Santa has gone gluten-free and he’s watching his waistline—he’ll love these cookies with a glass of pure organic hemp milk!


2 ripe medium sized bananas, mashed
2 cups old-fashioned pure oats (large flakes)
1/4 cup natural peanut butter or almond butter
1/8 cup organic, extra virgin coconut oil

1/4 cup unsweetened cocoa powder
1/4 cup unsweetened applesauce
1/4 cup coconut sugar

2 teaspoons vanilla extract
1 teaspoon sea salt


1. Preheat oven to 350°F.

2. Mash bananas in a large bowl, then stir in remaining ingredients.

3. Let batter stand for approximately 20 minutes, then drop by teaspoonful onto cookie sheet lined with parchment paper.

4. Bake 10-12 minutes.

Makes 18 cookies
