Gluten-Free Dairy-Free Vegan No-Bake QUINOA COOKIES

We believe anytime is a good time for a good cookie, and you can never have too many good cookie recipes in your recipe box. These super-delicious, nutrient-dense no bake quinoa cookies are free of gluten, dairy, sugar, and can be made nut-free. They are a cinch to make, and there is absolutely no cooking required! Enjoy these cookies along with the multiple health benefits of the superfood, quinoa. Learn about the many benefits of quinoa here:


1/4 cup coconut oil (organic, extra virgin)
1/2 cup maple syrup or honey
1/3 cup unsweetened cocoa powder
1/2 cup creamy unsweetened peanut butter or almond butter,
or sunflower seed butter (for nut-free version)
1 teaspoon vanilla extract
1/2 teaspoon sea salt salt
3 cups cooked white quinoa (from 1 cup uncooked)


1. Line a baking sheet with parchment paper.

2. Combine coconut oil, maple syrup, and cocoa powder in a small saucepan. Bring to a boil for about 1 minute over medium heat and stir.

3. Remove from the element.

4. Add in the rest of ingredients and combine.

5. Drop “dough” by teaspoon onto baking sheet and put in freezer for 1 hour.

Makes 20 cookies.
