Kathy Smart’s Gluten-Free Fudge

Celebrate Celiac Disease Awareness Month with something decadently special! This gluten-free, dairy-free, refined sugar free, vegan fudge has become all the healthy sweet tooth rage! Not only has it become an instant hit and favorite treat on TV and You Tube – it was also a green room treat exclusively hand picked for Oprah when she visited Ottawa on her recent Canadian speaking tour. This fudge is divine enough for any gluten-free or vegan diva, and makes a very special and decadent gift for Mother’s Day. Wrap it up in a pretty box with colorful ribbons and enjoy!

1/2 cup coconut oil
1/2 cup unsweetened cocoa
1/2 cup pure maple syrup
1/2 cup unsweetened almond butter or natural peanut butter
1 teaspoon vanilla
1/2 teaspoon sea salt
1/2 cup unsweetened shredded coconut (optional)


1. Put all ingredients into a food processor and pulse a few times until blended. Do not over-pulse or it will become runny.

2. Line a muffin tray with liners and add 1 tablespoon of the mixture.

3. Place muffin tray in freezer for 10 minutes until firm.

Makes 18 servings.
